Chakula Tayari: Mushroom and Spinach Flatbread


This is one of my quickest meal options that always leaves me wanting more. It proves that anything sauteed with garlic and red onion can do no wrong. Throw in spinach, mushroom, and zucchini and you have magic in your mouth. Throw that one some Trader Joe's Flat Bread with a thick line of garlic hummus and you have dinner.

What you need:
  • flat bread
  • mushrooms
  • spinach
  • zucchini
  • garlic
  • red onion
  • your favorite hummus 
  • evoo

 Enjoy!

  2. OhSoBree - instead of grilled chicken, why not grilled tofu or tempeh? Tempeh is absolutely delicious and has a great texture. It's almost to die for...and so versatile! Tofu, also, absorbs all manner of marinades wonderfully. If you really want a sense that you're eating meat, use Portobello mushrooms. And toss on some chopped nuts, toasted or untoasted. Beans are really great too, and everyone has a favorite kind of bean. There's plenty of protein to be had in the world - and no need to eat flesh to get it! :D
